Application:
1). In food flavors, it adds a sharp, fruity, chocolate-like, and coffee-like note.
2). It is used in chocolate, coffee, and fruit flavor systems.
3). In fragrances, it gives a characteristic harsh, aldehydic top note.
4). Industrially, valeraldehyde is an intermediate. It is used to make valeric acid and amyl alcohol. These go into plasticizers and lubricants.
Storage:
1). Store valeraldehyde at 2-8 °C under inert gas. Keep it cold. It oxidizes fast at room temperature.
2). Keep the container tightly closed. Store in a cool, fireproof, well-ventilated area. No smoking.
