Application:
1). It builds orange, tangerine, and orange blossom profiles. It also adds a waxy-sweet edge to rose and jasmine flavors.
2). It works in bergamot, lavender, orange blossom, rose, jasmine, violet, lilac, and acacia. It adds body to gardenia.
3). Chemical buyers use decanal as an intermediate in organic synthesis and pharmaceutical manufacturing.
Storage:
1). Keep decanal in a sealed, nitrogen-purged bottle. Refrigerate at 2–8 °C. Do not store at room temperature long term.
2). Air turns decanal into decanoic acid. The acid value rises. The liquid darkens from colorless to yellow. The orange note goes sour and waxy. Once that happens, the batch is done.
