Application:
1). Maltol adds caramel, cotton candy, and strawberry notes. It is used in beverages, baked goods, candy, dairy, and desserts.
2). In fragrances, it is a middle to base note. It builds vanilla, caramel, and gourmand accords. It modifies vanillin and adds warmth.
3). In pharmaceuticals, it masks bitter tastes. It is also used in tobacco flavoring.
Storage:
1). Maltol sublimes. At about 93 °C it turns directly from solid to vapor. Do not store near heat or in direct sunlight.
2). Store below 30 °C in a cool, dry place. Keep the bag or drum tightly closed.
3). Do not store in bare metal. Maltol chelates metal ions. This causes discoloration and purity loss. Use glass, plastic, or resin-lined containers.
